UNIKON is cookie forming machine for making cookies, shortcake, cakes, fancy cakes, butter cookies, shortbread biscuits, almond pastries, lady´s fingers weighing from 10 to 60 grams. It`s capacity ranges from 36 to 200 kg/hr. Products may have very different shapes and designs, such as kurabie Bakinskoye and Romashka (Baku and Daisy butter cookies), a ring, heart, square, star, crescent, etc., which are determined by the designs of the interchangeable nozzles - smooth, grooved or multiple. Products drop on baking plates 300 x 600 mm.

Standard manual cookie deposition in an 8-hour shift is about 80 kg. One operator of a UNIKON machine in the same shift in three-dimensional cookies mode deposits about 300 kg of cookies of various shapes, which is impossible to equal manually. Therefore, it can be argued that an operator working on a machine replaces a team of 5 to 6 people, and that the payback of the machine is no more than 6 months.


UNIKON's suitable for production of diverse cookies and other pastry products - gingerbread, cookies and fancy cakes etc. It can use all kinds of dough: shortbread, gingerbread, raw, choux pastry, yeast, etc, with various consistence. To prevent dough drop when depositing there is a reverse rotation of the pump roller.

The machine is programmed to operate in two modes:

  1. In the forming of bulk products of different sizes and different shapes with three-dimensional pattern - Kurab´e "Baku", "daisy", "dollar", curly "Baton", etc.
  2. Wire cutting mechanism can be during deposition . In this mode, the product is deposited in various sizes, thicknesses and various two-dimensional figure - a circle, ring, square, rectangle, star, crescent, chamomile, etc.

The product’s weight is from 10 to 60 grams. Product size is determined by the hole size of the installed nozzles. Product thickness is determined by dough feeding speed and can be regulated during the depositing. Unit configuration can be various and depends on type of nozzles (50 kinds) listed in the nozzle catalog.

During the process it`s possible to change the rotation speed of the dough feed rollers for unit thickness and weight variation.

Time for the UNIKON change-over from the Dosing 3-D to Dosing with a wire-cutting device goes on 3...5 minuts. Nozzle substitution time is the same. The necessary machine components and parts can be easily dismounting for washing and cleaning.

The machine is supplied with the feed mechanism by rolls (conventional design).

Machine UNIKON consists of the following components:

  • body (frame with plating)
  • roller feeder and hopper
  • table with landing gear
  • wire cutting mechanism
  • electrical and electronic part

All parts and machine components made of steel. The frame is painted gray. Bunker machine is made of stainless steel. For the manufacture of bearings used bronze or special durable plastic. All the materials and coatings used in the manufacture of the machine are approved for using in food production. Some parts of the machine in contact with the dough made from carbon steel, after the washing machine should be carefully wiped and grease.

Roller dough feed pump consists of two rollers which rotate when applying the in the opposite direction. The outer part is made of caprolon rolls and has a deep longitudinal grooves. With this pump design is achieved the same size and weight of the product.

Pump speed and, consequently, the feed rate of the nozzle can be adjusted to directly work with the machine while observing the change in size of the obtained products. This possibility of smooth adjustment shaft speed is possible in connection with the use of a variable frequency drive.

Bottom hopper mounted holder with 4 established nozzles (matrices), which allows products to be deposited on the tray width up to 300 mm. Possible to use a sheet width of 600 mm, but this tray is full, it will expand to the other party. The length of the sheet(tray) can be can be arbitrary. Tray moves by the operator on the machine table manually to have the desired distance between the rows.

The machine is designed to operate in two modes: molding products with surround pattern and mode of deposition of flat products with a two-dimensional pattern with the use of wire cutting. Different modes of the UNIKON machine operation controlled by a controller, and changing parameters and switching operation of the machine operation is carried out with the touch screen. Reconfiguring the machine mode to the forming a wire cutting mode and back again is in a few minutes. 25 different recipes can be written in the electronic memory of the machine.


For operation in forming the bulk of products there are set of a certain type of nozzles, wire cutting mechanism disconnects and connects the mechanism of up-down table. The duration of one cycle of molding ( for 4 units) is from 4 to 8 seconds. The cycle consists of the following successive steps: lift table, feed dough reversing the flow of the test shaft, lowering the table, break for moving the tray. Reversed rotation facilitates separation of products and prevents dripping batter.

In the deposition with the use of wire cutting, then the correct nozzle, disconnected the drive table and the table is set to the desired height, attached wire cutting mechanism. The table in this mode is fixed and the dough is fed continuously to the nozzles with fixed speed. The duration of one cycle takes approximately 2.5 seconds. The cycle consists of the following steps: feeding the test, cutting the production string and break on the movement of the tray.

For a more comfortable operating the machine UNIKON left and right of the machine it is desirable to put one small table under a clean and already filled products trays. If the sheets with the deposited product picks up and puts in the oven trolley operator, then the maintenance of the machine is quite a man.

UNIKON machine perfectly integrated into the process line, since its performance mode correspondence wire cutting performance the most common rotary furnaces. Products can also be baked in Ovens, or in tunnel kilns.

The standard UNIKON machine is supplied with a set of F2 nozzles with 12 teeth for three-dimensional molding and a set of C7 nozzles with a round hole for wire-cutting. At the customer´s request any other nozzles from the catalog with various design can be produced.


The UNIKON machine can produce cookies and other confectionary with a wide range of size and pattern. The design and size of the products is determined by the shape of the outlet of the installed nozzles.

The weight of the finished product can vary from 10 to 80 grams. The machine allows the weight of the deposited products to be changed with the same nozzles.


The UNIKON machines have been available since 2009. Electronic touch control is installed on the machine since February 2012.

The warranty period of the machine is 2 year. In the manufacture of machine tools is strictly enforced production technology and are used only materials permitted for use in food production.
